Συστατικά
Για το προζύμι
- 1 φακελάκι ξηρή μαγιά
- 150 γρ. αλεύρι για όλες τις χρήσεις
- 250 ml χλιαρό νερό
- 1 κ.σ. ζάχαρη κρυσταλλική
Για τη ζύμη
- 850 γρ. αλεύρι φαρίνα
- 250 γρ. ελιές μαύρες, χωρίς κουκούτσι
- 250 ml χυμό πορτοκαλιού
- 100 ml φυτικό βούτυρο
- 50 ml ηλιέλαιο
- 1 κ.γ. αλάτι
- 1 πρέζα κανέλα
- 1 κ.σ. δυόσμο, ξηρό
- 2 μέτρια κρεμμύδια, ψιλοκομμένα
- ½ ματσάκι φρέσκο κόλιανδρο, ψιλοκομμένο
Μέθοδος Εκτέλεσης
Για το προζύμι
- Βάζουμε τη μαγιά, τη ζάχαρη και το χλιαρό νερό στον κάδο του μίξερ και ανακατεύουμε με ένα σύρμα μέχρι να διαλυθεί η μαγιά.
- Προσθέτουμε το αλεύρι και ανακατεύουμε. Σκεπάζουμε το μπολ με μία μεμβράνη και αφήνουμε σε ένα ζεστό μέρος για περίπου 30- 60 λεπτά μέχρι να διπλασιαστεί σε μέγεθος.
Για τη ζύμη
- Σε ένα μεγάλο μπολ βάζουμε το αλεύρι, την κανέλα, το ηλιέλαιο, το βούτυρο, το δυόσμο και τα ρυζιάζουμε όλα μαζί μέχρι να μοιάζουν με ψίχουλα.
- Ακολούθως, κάνουμε μια λακουβίτσα στο κέντρο και ρίχνουμε μέσα το χυμό πορτοκαλιού, το μείγμα της μαγιάς, το αλάτι, και ζυμώνουμε μέχρι να γίνει μια ελαστική και λεία ζύμη.
- Έπειτα προσθέτουμε τις ελιές, τον κόλιανδρο και ξαναζυμώνουμε.
- Βάζουμε τη ζύμη σε ελαφρά λαδωμένο μπολ, τη σκεπάζουμε με μία μεμβράνη και την αφήνουμε να φουσκώσει για περίπου 1 ½ ώρα σε ζεστό σημείο μέχρι να διπλασιαστεί ο όγκος της.
- Προθερμαίνουμε το φούρνο στους 180°C.
- Κόβουμε τη ζύμη σε κομμάτια βάρους 180 γρ. και με τα χέρια μας σχηματίζουμε μπαλάκια.
- Τοποθετούμε τα μπαλάκια σε ταψιά που έχουμε στρώσει με λαδόκολλα και τα αφήνουμε να φουσκώσουν για 30 λεπτά περίπου.
- Ψήνουμε για 60 λεπτά περίπου μέχρι να ροδοκοκκινίσουν.

Ingredients
For the sourdough
- 1 sachet of dry yeast
- 150 g all-purpose flour
- 250 ml lukewarm water
- 1 tbs granulated sugar
For the dough
- 850 g strong flour
- 250 g black olives, unpitted
- 250 ml fresh orange juice
- 100 g vegetable butter
- 50 ml sunflower oil
- 1 tsp salt
- 1 pinch of cinnamon
- 1 tbs mint, dry
- ½ bunch of fresh coriander, chopped
Method
For the sourdough
- Add yeast, sugar and lukewarm water in the bowl of an electric stand mixer, whisk until the yeast dissolves.
- Add the flour and stir. Cover the bowl with a plastic wrap and leave it in a warm place for about 30-60 minutes until it doubles in size.
For the dough
- Put in a large bowl the flour, cinnamon, oil, butter, mint and rub mixture in between your fingers until it resembles wet sand. Make a small well in the center and add the lukewarm water, the mixture of yeast salt, and beat with the mixer until you create a smooth and elastic dough.
- Then, add the olives and coriander and knead again with your hands.
- Shape into a ball. Brush a bowl with oil, place the dough in it and cover with plastic wrap.
- Set it aside to rest and rise for at least 1 ½ hours, at room temperature, until it doubles in size.
- Preheat oven to 180℃ fan.
- When the dough is ready, punch down on a clean working surface.
- Cut the dough into pieces weighing 180 g and make balls.
- Put the balls in a baking dish lined with parchment paper.
- Let the balls to double in size about 30 minutes.
- Bake for 60 minutes until golden.
